Parmesan and coriander puffs

    ml
    water
  • 75
    ml
    milk
  • pinch of salt
  • 50
    ml
    butter, cut into pieces
  • 115
    ml
    plain flour
  • 3
    large eggs
  • 100
    ml
    Parmesan cheese, finely grated
  • 25
    ml
    chopped coriander
  • freshly ground black pepper
 

Method

 
Bring water, milk, salt and butter to the boil in a saucepan. Add the flour and beat with a wooden spoon. Cook until the mixture leaves the side of the pan and forms a ball (as for choux pastry). Remove from the heat and cool slightly. Beat in the eggs one at a time and mix well. Stir in the remaining ingredients, and spoon the pastry to form little rounds on a damp baking sheet. Bake in a preheated oven for 25 to 30 minutes, until the puffs are well puffed up, crisp and golden. Serve with Gazpacho soup with Parmesan and coriander puffs (see recipe).
