Parma, pear and blue cheese wraps

Ingredients (9)

250 ml water — cold
65 ml lemon juice
2 pears — cored, wedges
8 parma ham — slices
8 blue cheese
24 rocket
12 fresh basil
olive oil — lemon-infused
freshly ground black pepper

Method:

Mix together the cold water and lemon juice and pour over the pear slices. Allow to steep a few minutes to prevent discoloration. Drain and pat dry thoroughly.

Just before serving, lay a slice of Parma ham on a board and lay a slice of pear, blue cheese, rocket and basil leaves on one end and roll up, making sure some of the filling ingredients protrude above the ham roll. Stick into small glasses and if using, drizzle with olive oil and dust with black pepper then serve. 

Chef’s hint:
You can substitute the pear for melon to re-create an old classic.
