Ingredients (13)

4.00 garlic — cloves, crushed
5.00 ml salt
10.00 ml paprika — ground
25.00 ml french mustard
1.00 kg pork — chops
60.00 ml fresh chillies — 573
15.00 ml white wine vinegar
5.00 ml fresh sage
500.00 ml stock — vegetable
sea salt and freshly ground black pepper
1.00 orange — zest only
50.00 g olives — green, pitted
30.00 ml fresh parsley — chopped

Method:

Mix the garlic, salt, paprika and mustard together to form a paste. Spread on to both sides of the pork chops.
Heat the oil in a large saucepan and fry the chops for two minutes on each side to brown.
Add the vinegar, sage, stock and seasoning and bring to the boil.
Turn down the heat to simmer, cover and cook for about an hour.
Add the orange rind and olives, stir well and cook for a further five minutes.
Serve with parsley.
