Paprika pork casserole

    cloves garlic, crushed

    salt

    ml
    ground paprika
  • 25

    French mustard
  • 1
    kg
    pork chops
  • 60
    ml
    olive oil
  • 15
    ml
    good quality white wine vinegar
  • 5
    ml
    fresh sage
  • 500
    ml
    vegetable stock
  • salt and freshly ground black pepper
  • 1
    orange, grated rind
  • 50
    g
    green olives, stoned
  • 30
    ml
    freshly chopped parsley
 

Method

1 hour 10 minutes
 
Mix the garlic, salt, paprika and mustard together to form a paste. Spread on to both sides of the pork chops. Heat the oil in a large saucepan and fry the chops for two minutes on each side to brown. Add the vinegar, sage, stock and seasoning and bring to the boil. Turn down the heat to simmer, cover and cook for about an hour. Add the orange rind and olives, stir well and cook for a further five minutes. Serve with parsley.
