Panettone French toast with palm-sugar butter

    free-range eggs
  • 190
    ml
    milk
  • 4
    slices panettone or raisin bread
  • butter, to fry
  • PALM-SUGAR BUTTER
  • 125
    ml
    butter
  • 190
    ml
    palm sugar, grated
  • 2
    ripe mangoes, peeled and sliced
 

Method

10 minutes
 
Lightly whisk together eggs and milk.
Soak each slice of panettone or raisin bread in the mixture.
Melt a blob of butter in a hot frying pan and cook bread on both sides until golden and crisp.
PALM-SUGAR BUTTER:
Mix together butter and palm sugar.
To serve, place a dollop of palm-sugar butter on each slice, and top with a slice of fresh mango.
