Pancakes with coconut filling

Ingredients

  • 1
    cup
    cake flour
  • 1
    egg
  • 1
    tsp
    vanilla essence
  • pinch
    salt
  • 1
    Tbs
    sugar
  • 1
    cup
    1/2 water and 1/2 milk
  • Coconut filling:
  • 1 1/4
    cup
    water
  • 1
    cup
    sugar
  • 2 to 3
    cinnamon sticks
  • 1
    cup
    fine cocounut flakes
 

Method

15 mins
 
Pancakes:
Mix all the ingredients together.
Leave mixture to set for about 15 minutes.
Fry in a non-stick pan, using spray and cook.

Makes about 30 pancakes.

Coconut filling:
Bring water, sugar and cinnamon to a boil.
In a bowl, add 1 cup fine coconut, gradually add in sugar syrup
Mix into a paste that is not too think

Pour on pancakes and then roll up.
