Pancake sandwiches

  • 6
    slices white bread
  • smooth apricot jam
  • a little milk
  • pancake batter
  • enough oil for shallow frying
  • cinnamon sugar


Spread three slices of bread with a thick layer of apricot jam and cover with the remaining three slices. Quarter each sandwich to make 12 triangles. Quickly dip each triangle in a little milk and then in the pancake batter. Fry in shallow oil on both sides until golden brown. Sprinkle with cinnamon sugar while still hot and serve lukewarm. Makes 12 triangles.
