Pan-grilled steak with chive and garlic butter

  • 4
    slices Scotch fillet
  • 5
    ml
    salt
  • freshly ground black pepper to taste
  • CHIVE AND GARLIC BUTTER
  • 50
    g
    butter
  • 15
    ml
    lemon juice
  • 2
    cloves garlic, chopped
  • 30
    ml
    chopped chives
  • 1
    ml
    salt
  • freshly ground black pepper to taste
  • 15
    ml
    prepared mustard
 

Method

 
Cut slits in the fatty edges of the 25 mm thick meat slices to prevent it from curling while cooking. Heat a pan until it begins to smoke without adding any butter or oil. Place the steaks in the pan and pan-grill on both sides for 7-10 minutes or until the meat is rare or medium. Season with salt and pepper. Transfer the steaks to a hot meat platter. Meanwhile, melt the butter in the pan and add the remaining ingredients. Pour over the meat and serve immediately, before the meat becomes tough. Serves 4.
