Pan-fried fish with red pepper sauce

    olive oil

    red peppers, cored, seeded and finely chopped
  • 1
    small onion, finely chopped

    water

    thick cream
  • salt and black pepper to taste
  • 600
    g
    frozen hake fillets (skinned while frozen)
  • seasoned cake flour
  • 45
    ml
    butter
  • 45
    ml
    olive oil
  • 65
    ml
    fresh lemon juice
  • fresh dill for garnishing
 

Method

 
Prepare the sauce: Heat the oil in a fairly small saucepan and sauté the red peppers and onion for 1 minute. Add the water, cover and simmer until tender. Remove from the pan and process the pepper mixture and cream to form a smooth purée. Season to taste with salt and pepper. Reheat gently just before serving. Season the fish to taste with salt and pepper and dredge with the seasoned cake flour. Heat the butter and oil in a fairly large pan and fry the fish over medium heat until golden brown on both sides. Baste with lemon juice and serve with the warmed red pepper sauce. Garnish with sprigs of dill if desired. Serves 4.
