Pan-fried coriander fish

    butter
  • 90
    ml
    olive oil
  • 6
    silverfish, cleaned and gutted
  • 90
    ml
    red wine vinegar
  • 90
    ml
    chopped fresh coriander
  • salt and milled black pepper
 

Method

 
Melt butter and olive oil in a frying pan and fry fish for 3 to 5 minutes on each side. Stir in vinegar and coriander, season and heat through. Serve with chips.
