Ingredients (13)

10.00 baby potatoes
1.00 onion — thinly sliced
105.00 g oysters — smoked
125.00 ml melon — sweet, cubed
1.00 red pepper — diced
lettuce — to serve
1.00 lemon — zest only
DRESSING
1.00 garlic — cloves, crushed
80.00 ml sunflower oil
30.00 ml lemon juice
1.00 fresh chillies — chopped
5.00 ml castor sugar
25.00 ml fresh coriander — chopped

Method:

Boil the potatoes until tender, then cut in half.
Mix the dressing ingredients together and pour over the warm potatoes.
Add the onion and mix to coat well. Set aside until the potatoes are cool.
Add the oysters, melon, red pepper and lettuce leaves to the potato mixture. Toss gently.
Divide between 4 serving dishes, sprinkle with lemon rind and garnish with a sprig of fresh coriander.
