Oyster salad with chilli dressing

    baby potatoes

    onion, thinly sliced

    smoked oysters, drained

    sweet melon, cubed
  • 1
    red pepper, diced
  • lettuce leaves, to serve
  • 1
    lemon, grated rind
  • DRESSING
  • 1
    clove garlic, crushed

    sunflower oil

    lemon juice
  • 1
    fresh chilli, chopped

    castor sugar

    coriander, freshly chopped
 

Method

 
Boil the potatoes until tender, then cut in half. Mix the dressing ingredients together and pour over the warm potatoes. Add the onion and mix to coat well. Set aside until the potatoes are cool. Add the oysters, melon, red pepper and lettuce leaves to the potato mixture. Toss gently. Divide between 4 serving dishes, sprinkle with lemon rind and garnish with a sprig of fresh coriander.
