Oxtail with green apple

    oxtail
  • 15
    ml
    oil
  • 2
    large leeks, finely chopped
  • 7
    ml
    salt
  • 1
    ml
    freshly ground black pepper
  • 1
    bay leaf
  • 5
    ml
    tarragon (optional)
  • 25
    ml
    dry white wine
  • 750
    ml
    beef stock
  • 2
    small green apples, diced
 

Method

 
Slice the oxtail into sections at the joints and brown in the oil. Remove from the saucepan and sauté; the leeks in the pan fat until tender. Return the meat to the pan with the leeks and add the salt, seasonings and wine. Pour over 250 ml (1 c) of the stock (prepared using 1 1/2 cubes). Cover and simmer slowly for 2 1/2 to 3 hours until tender. Add stock as needed. Add the diced apple and simmer until the apple is just tender. Season with extra salt and pepper if necessary. Serve with mashed potatoes and glazed carrots.
