Oxtail in beer

    oxtail, cut into pieces
  • salt and freshly ground black pepper
  • oil and butter for frying
  • 2
    large onions, sliced into rings
  • 500

    carrots, scraped clean and cut into pieces
  • 2

    dried thyme
  • 2
    ml
    dried sage
  • 60
    ml
    cake flour
  • 340
    ml
    beer
  • 500
    ml
    beef stock
 

Method

1 hr 30 min - 2 hrs
 
Preheat the oven to 160 ºC (350 ºF). Spray a large oven dish with non-stick spray. Season the oxtail with salt and pepper and brown in heated oil and butter. Transfer to the prepared oven dish. Sauté the onion and carrots until glossy and season with thyme and sage. Sprinkle with cake flour and mix well to remove all lumps. Add the beer and beef stock and heat while stirring continuously until the mixture comes to the boil. Pour over the oxtail and cover. Bake for 1 1/2 to 2 hours or until the meat is tender and easily falls off the bone. Serve with pearl wheat. Serves 6.
