Oven-roasted red onions with thyme butter

6.00 red onions
fresh thyme — chopped
sea salt — coarse
butter

Method:

Remove the outer leaves of the onions and trim the bottoms so they are level. Cut a deep cross nearly all the way through from the top of each onion. Mix the chopped thyme leaves, coarse sea salt and a knob of butter and press deep into the cross. Roast the onions at 200 ºC for about 30-35 minutes until tender.
Serves 4.
