Oven-roasted red onions with thyme butter

    red onions
  • thyme leaves, chopped
  • coarse sea salt
  • butter


Remove the outer leaves of the onions and trim the bottoms so they are level. Cut a deep cross nearly all the way through from the top of each onion. Mix the chopped thyme leaves, coarse sea salt and a knob of butter and press deep into the cross. Roast the onions at 200 ºC for about 30-35 minutes until tender. Serves 4.
