Oven-roasted lamb loin

  • 700
    trimmed Karoo lamb loin
  • a few sprigs of fresh rosemary
  • a few sprigs of fresh thyme
  • 2
    cloves garlic
  • salt and pepper to taste


1. Place lamb loin pieces in a roasting pan and heat to seal on very high heat on top of stove. 2. Remove lamb loin from pan. Place rosemary and thyme sprigs together with garlic in roasting pan. 4. Place lamb on top of the herbs and season. Place lamb in a preheated 180 ºC oven and roast until medium. Serve with Balsamic green beans (see recipe).
