Oven-roasted lamb

  • 700
    trimmed lamb loin
  • a few sprigs of fresh rosemary
  • a few sprigs of fresh thyme
  • 2
    cloves garlic
  • salt and pepper


1. Place lamb loin pieces in a roasting pan and heat to seal on a very high heat on top of the stove. 2. Remove lamb loin from pan. Place rosemary and thyme sprigs in the roasting pan with the garlic. 3. Place lamb on top of the herbs and season to taste. Place in a preheated oven at 180 ºC and roast until medium done. 4. Serve with potato purée and ratatouille sauce (see recipes).
