Oven-roasted butternut

    large butternut
  • 10
    ml
    coriander seeds
  • 10
    ml
    dried origanum
  • 3
    ml
    fennel seeds
  • 2
    small red chillies
  • 5
    ml
    salt
  • 5
    ml
    freshly ground black pepper
  • 1
    clove garlic, crushed
  • 15
    ml
    olive oil
 

Method

Preheat the oven to 200 ºC. Rinse the butternut, halve lengthways and cut into long wedges. Remove the seeds with a spoon. Arrange the wedges in an oven dish, skin side facing down. Place the dried herbs and spices in a food processor and process rapidly until slightly finer. Add the garlic and olive oil and mix well. Sprinkle the mixture evenly over the butternut. Roast for about 30 minutes or until soft and cooked. Serves 4 as a side dish with meat.
