  • 1
    kg
    ripe Italian (jam) tomatoes
  • milled pepper
  • olive oil
  • brown sugar
 

Method

 
Halve tomatoes and discard seeds. Place tomatoes on a baking sheet, cut side up. Pour over a little olive oil, sprinkle with pepper and brown sugar. Bake at 180 ºC until edges begin to discolour, 1 hour. Remove and serve hot or cold.
