Oven-baked tomatoes and mushrooms

    ripe tomatoes, quartered
  • 250
    g
    whole fresh oyster mushrooms or fresh button mushrooms
  • 250
    g
    whole fresh button mushrooms, wiped clean
  • 50
    ml
    olive oil
  • 20
    ml
    mixed fresh herbs, chopped
  • salt and freshly ground black pepper
  • 250
    g
    bacon rashers
 

Method

Heat the oven to 180 ºC and brush a baking sheet with olive oil. Place the tomato quarters and mushrooms on the baking sheet and brush with olive oil. Sprinkle with herbs and season well with salt and black pepper. Bake for about 20 minutes until soft and done. Brush with extra oil occasionally if a bit dry. Fry the bacon in a ribbed pan or bake with the tomatoes and mushrooms in the oven. Serve with the potato cake.
