Oven-baked Parmesan Chicken

    fresh breadcrumbs

    Parmesan cheese, grated

    spring onions, finely chopped
  • 1
    Finely grated rind and juice of a lemon

    butter, melted
  • salt and freshly ground black pepper to taste

    chicken breast fillets

    fresh parsely, chopped


1. Pre-heat oven to 180 degrees Celcius.
2. In a small bowl mix together breadcrumbs, Parmesan, spring onions, lemon rind, butter, salt and pepper.
3. Divide the mixture between the chicken breasts and using a fork, press the mixture on top to form an even coat.
4. Place the chicken in a greased oven tray and bake for 20 minutes. Remove chicken and keep warm.
5. Add the lemon juice and parsley to the juices in the tray, mix well. Pour the juices over the chicken. Serve immediately with savoury rice.
