Ostrich with sweet potato and butternut stew

    ostrich steak, cubed

    onion, chopped
  • 1
    butternut, cubed
  • 2
    sweet potatoes, cubed

    flour

    curry powder

    ml
    ground cumin
  • 15
    ml
    ground coriander
  • 5
    ml
    ground cinnamon
  • 5
    ml
    ground ginger
  • 5
    ml
    turmeric
  • 500
    ml
    chicken stock
 

Method

1. Heat olive oil in a large saucepan. Add the ostrich meat and brown on all sides. Add onion and sauté translucent. Add butternut and sweet potatoes and stir for 5 minutes.
2. Add flour, curry powder, cumin, coriander, cinnamon, ginger and turmeric and stir for 1 minute. Pour in the stock and stir for another 1 minute, until the flour has been obsorbed. Simmer at a low heat for 30 minutes, or until meat and vegetables are tender.
3. Serve hot with brown rice.
