Ostrich steak with green peppercorn and sultana sauce

    beef stock

    sultanas, soaked in warm water

    green peppercorns

    Dijon mustard

    cream
  • salt and freshly ground black pepper, to taste
  • STEAK
  • 4
    ostrich fillet steaks
  • 30
    ml
    oil
  • 30
    ml
    butter
 

Method

SAUCE: Melt the butter in a saucepan and sauté the onion and garlic until soft. Stir in the flour and cook for 1 minute. add the stock and port gradually, stirring constantly. Cook until sauce has thickened, then add the sultanas, peppercorns, mustard, cream and seasoning. Continue to cook over a gentle heat for 1 minute, then remove from the heat, cover and set aside. STEAK: Heat the butter and oil together in a large, heavy-based frying pan. Fry the steaks over a high heat for 2-3 minutes on each side. Serve immediately with the sauce. Serves: 4 Preparation time: 15 minutes Cooking time: 10 minutes
