Ossobuco (Veal and wine stew)

Ingredients

    g
    veal shank
  • 50
    ml
    flour
  • 45
    ml
    olive oil
  • 500
    ml
    dry white wine
  • 4
    cloves garlic, crushed
  • 70
    g
    tomato paste
  • 1
    lemon, rind and juice
  • 50
    ml
    freshly chopped parsley
 

Method

1 1/2 hours
 
Dust the veal with the flour. Heat the oil in a saucepan and brown the veal. Add the wine, 2 cloves of garlic, tomato paste and lemon juice. Bring to the boil, then reduce the heat, cover and simmer for about 1 1/2 hours or until tender. Mix the parsley, remaining garlic and lemon rind together (this is called Gremalata). Sprinkle over the ossobuco once served.
