Oriental shortbread

    butter spread or butter

    ml
    castor sugar
  • 1
    ml
    bicarbonate of soda
  • 3
    ml
    ground cardamom
  • 1
    ml
    ground nutmeg
  • 80
    ml
    semolina
  • 5
    ml
    baking powder
  • 500
    ml
    cake flour
  • 50
    ml
    almonds, dipped into food colouring and chopped
 

Method

30 minutes
 
Cream butter spread or butter and sugar together until light. Add bicarbonate of soda, spices and semolina and beat well. Add flour and baking powder and mix well to form a smooth dough. Roll into balls, then roll each ball in chopped almonds. Place on a greased baking tray and bake in preheated 160 °C oven for 20 to 30 minutes until golden.
