Ingredients (8)

250.00 g noodles — vermicelli, glass variety
80.00 ml ginger — pickled
500.00 ml watercress
45.00 ml fresh coriander — roughly chopped
45.00 ml soy sauce
30.00 ml sesame seeds — toasted
200.00 g salmon — smoked
0.00 soy sauce — and wasabi, to serve

Method:

Soak the noodles in boiling water for two minutes and drain.
Mix lightly with the ginger, watercress, coriander, soya sauce and sesame seeds.
Spoon the noodle salad onto plates and top with slices of salmon.
Serve with extra soya sauce and wasabi (Japanese horseradish mustard).
