Oriental ginger noodle salad

    g
    vermicelli glass noodles
  • 80
    ml
    pickled ginger
  • 500
    ml
    watercress
  • 45
    ml
    roughly chopped fresh coriander
  • 45
    ml
    soya sauce
  • 30
    ml
    sesame seeds, toasted
  • 200
    g
    smoked salmon
  • extra soya sauce and wasabi for serving
 

Method

 
Soak the noodles in boiling water for two minutes and drain.
Mix lightly with the ginger, watercress, coriander, soya sauce and sesame seeds.
Spoon the noodle salad onto plates and top with slices of salmon.
Serve with extra soya sauce and wasabi (Japanese horseradish mustard).
