Oriental fried rice

    ml
    uncooked white or brown rice
  • 45
    ml
    sunflower oil
  • 2
    medium-sized celery sticks, thinly sliced
  • 500
    ml
    diced leftover chicken, turkey or pork
  • 375
    ml
    frozen green peas, thawed and drained
  • 1
    carrot, peeled and grated
  • 15
    ml
    soy sauce
  • 2
    eggs, lightly beaten
  • 2
    spring onions, including tops, finely chopped
 

Method

 
Cook the rice in boiling, salted water, drain and set aside. Heat the oil in a deep frying pan over a moderate heat for 1 minute. Add the celery and stir-fry for 2 minutes. Mix in the rice, chicken, peas, carrot and soya sauce. Cook, uncovered, stirring frequently, for 5 to 7 minutes or until heated through. Stir in the eggs and cook, stirring constantly, just until the eggs are set. Sprinkle with spring onions.
