Oriental chicken kebabs

    lemon juice

    clove garlic, crushed

    fresh ginger, grated

    honey (or artificial sweetener)
  • 250

    soy sauce

    medium onion, quartered
  • 1
    green pepper, seeded and cut into bite sized pieces
  • 1
    red pepper, seeded and cut into bite sized pieces
  • 375

    button mushrooms, wiped but left whole
  • 400

    chicken breasts, skinned, deboned and cubed
  • 400

    pineapple rings, cut into bite sized pieces
 

Method

 
Combine all the marinade ingredients and pour into a flat container. Soak 8 wooden skewers in water before use to prevent burning. Thread onion, green and red peppers, mushrooms, chicken and pineapple pieces alternately onto skewers, then place the kebabs in marinade and refrigerate overnight. Cook the kebabs under a moderate grill or on the barbecue, turning from time to time to prevent burning. Serve with rice or baked potatoes and salad.
