Ingredients (11)

500.00 g chicken breast fillets
0.00 0 garlic — cloves, crushed
0.00 0 red chilli — deseeded, chopped
0.00 0 onion — small, finely chopped
0.00 0 lemongrass — finely chopped
0.00 0 fresh coriander — handful, chopped
40.00 ml fish sauce
30.00 ml breadcrumbs — dry
0.00 0 oil — for frying
0.00 0 fresh mint — to garnish
0.00 0 sweet chilli sauce — to serve

Method:

Place the chicken, garlic,
chilli, onion, lemon grass,
coriander leaves and fish
sauce in a food processor and
pulse until all the ingredients
are mixed.
Shape the mixture into
bite-sized balls, cover them in
breadcrumbs and fry in hot oil
until golden brown. Drain the
balls on kitchen paper.
Wrap a fresh mint leaf
around each ball and insert a
cocktail stick or small metal
skewer. Place each ball in a
salad leaf (in a glass,
if preferred).
