    chicken breast fillets (or 500g chicken mince)

    3 garlic cloves, crushed
  • 0
    1 red chilli, pitted and chopped
  • 0
    1 small onion, finely chopped
  • 0
    1 stem lemon grass, finely chopped
  • 0
    1 handful of fresh coriander leaves, chopped

    fish sauce
  • 30
    ml
    dry breadcrumbs

    oil for frying
  • 0
    mint leaves for garnishing
  • 0
    sweet-chilli sauce (for serving)
 

Method

Place the chicken, garlic, chilli, onion, lemon grass, coriander leaves and fish sauce in a food processor and pulse until all the ingredients are mixed. Shape the mixture into bite-sized balls, cover them in breadcrumbs and fry in hot oil until golden brown. Drain the balls on kitchen paper. Wrap a fresh mint leaf around each ball and insert a cocktail stick or small metal skewer. Place each ball in a salad leaf (in a glass, if preferred).
