Organic apple cake

    butter at room temperature
  • 4
    organic egg yolks, slightly beaten
  • FILLING

    butter
  • 250
    g
    sugar
  • 1
    pinch salt

    organic apples, peeled, cored and sliced
  • 2
    organic lemons, the juice
  • 2
    ml
    ground cloves
  • 5
    ml
    ground cinnamon
  • 60
    ml
    custard powder
  • 60
    ml
    cold water
  • icing sugar, to dust
 

Method

 
Preheat the oven to 180 °C.
Combine the dry ingredients and rub in the butter. Add egg yolks and mix.
Leave to rest while making the filling.
FILLING:
Melt the butter, add the sugar and stir until dissolved.
Add the salt, apples, lemon juice, cloves and cinnamon.
Cook until the apples are just tender (do not overcook).
Mix the custard powder and water to a paste and stir in just enough to thicken the apple mixture.
Oil the sides of a 7 cm-deep and 28 cm-wide, round, loose-bottomed or springform cake tin.
Press about two-thirds of the dough onto the base and sides of the tin.
Spoon in the apple filling, and scatter the remaining dough over it.
Bake for about 45 minutes.
Leave to cool, and dust with icing sugar.
