Ingredients (4)

750.00 ml orange juice — fresh
250.00 ml white sugar
65.00 ml cornflour — blended with cold water
3.00 eggs — white

Method:

Bring the orange juice and sugar to the boil, stirring until the sugar has dissolved. Stir in the cornflour paste and bring to the boil, stirring continuously. Simmer for one minute until thick and cooked through. Remove from the stove and cool slightly. Beat the egg whites until stiff and fold a little of the hot orange mixture into the egg whites. Fold the egg white mixture into the remaining orange mixture. Pour into a glass bowl and cool. Chill until firm and serve cold with cream.
Serves 4-6.
