Orange tart with syrup

    water

    grated orange rind

    orange juice

Preheat the oven to 180 ºC (350 ºF). Butter two 21 cm pie dishes or spray with non-stick spray. Beat the eggs until foamy and gradually add the sugar while beating. Sift together the dry ingredients and add to the egg mixture. Fold in gently. Bring the milk and butter to the boil, add to the egg mixture and mix lightly. Turn into the prepared pie dishes and bake for 20 minutes or until done. Meanwhile prepare the syrup: Heat the sugar, water, and orange rind and juice, stirring until the sugar has dissolved. Bring to the boil. Prick the hot tarts all over with a fork and pour over the syrup while still hot. Serve lukewarm or cold with cream. Makes two small tarts.
