    Litres
    freshly squeezed orange juice (Valencia)
  • 8
    oranges (grated rind only)
  • 250
    ml
    lemon juice
  • 2
    kg
    sugar
  • 15
    ml
    tartaric acid
  • 15
    ml
    Epsom salt
  • 1
    Litres
    boiling water
 

Method

 
Blend all the ingredients and stir until the sugar has dissolved. Stand for 24 hours. Strain through a sieve and clean cloth. Bottle and fasten the lids. Seal by dipping the bottles in melted candle wax. Makes 5 x 750 ml bottles.
