Orange sweet potatoes

    sweet potatoes, peeled and thickly sliced

    light brown sugar

    grated orange peel
  • 15

    cake flour
  • 5

    salt

    butter

    pieces stick cinnamon, broken

Method

 
Combine sugar, orange peel, flour and salt in a bowl. Place about a third of sweet potatoes in a saucepan, overlapping slices to cover base completely. Sprinkle potatoes with about a third of sugar mixture, dot with 15 ml (1 tbsp) butter. Cover with another third of sweet potatoes, another third of sugar mixture and 15 ml (1 tbsp) butter. Arrange remaining sweet potato slices on top, sprinkle with remaining sugar and butter. Tuck cinnamon under top layer of potatoes, pour water down side of pan. Bring to boil, cover tightly and reduce heat to low. Simmer for 45 minutes, or until soft but still intact. Occasionally slide pan back and forth vigorously to prevent bottom layer of potatoes from scorching or sticking. TOTAL KILOJOULE COUNT: 7 155 kJ (1 710 Cal). A portion: 1 430 kJ (340 Cal). Serves 6
