Orange salad

  • SALAD DRESSING
  • 100
    ml
    natural yoghurt
  • 100
    ml
    mayonnaise
  • 1
    ml
    grated orange rind
  • 5
    honey
  • salt
  • pepper
  • SALAD
  • 2
    large oranges, halved
  • 1
    green apple, diced
  • 1
    stick celery, chopped
  • 50
    ml
    chopped pecan nuts
  • lettuce leaves
 

Method

 
Blend all the ingredients for the dressing and season to taste with salt and pepper. Remove the orange pulp carefully (use a grapefruit spoon) and cut into pieces. Reserve the hollow halves. Mix the orange pieces, diced apple, chopped celery and pecan nuts. Coat with a little of the salad dressing. Place a lettuce leaf in each of the hollow orange halves and spoon some of the salad mixture into it. Place on a side plate and garnish with lettuce leaves. Serve with the remaining salad dressing. Serves 4.
