Method

Preheat the oven to 190 ºC. Grease the hollows of a muffin tin. Sift the cake flour, baking powder and salt together. Mix the sugar, yoghurt, honey, eggs, butter and orange rind together. Mix the dry ingredients with the liquid ingredients, stirring until just blended. Turn into the prepared muffin tin and bake for about 20 minutes until done and golden brown. Meanwhile prepare the syrup: Heat the orange juice, sugar and water over low heat until the sugar has dissolved. Bring to the boil, reduce the heat and simmer slowly for 5 minutes. Prick the baked muffins as soon as they come out of the oven and spoon the sauce over them. Leave the muffins in the tin to cool slightly before turning out. Serve as is. Makes 12 muffins.
