Orange mousse

    gelatine
  • 60
    ml
    cold water
  • 60
    ml
    boiling water
  • 3
    eggs, separated
  • 150
    g
    white sugar (use more or less, according to taste)
  • 500
    ml
    freshly squeezed orange juice
  • 1
    orange, grated rind
  • whipped cream, orange segments for decoration
 

Method

 
Sprinkle gelatine over cold water to hydrate, stir in the boiling water to dissolve. Beat the egg yolks with sugar until light. Add dissolved gelatine, then stir in the orange juice and rind. Chill mixture until half set. Beat egg whites until stiff and fold in. Pour into serving containers and leave to set. Decorate with whipped cream and orange segments. Serves 6.
