Orange-flavoured vetkoek

    ml
    self-raising flour
  • 30
    ml
    sugar
  • pinch salt
  • 2
    extra-large eggs
  • 500
    ml
    buttermilk
  • 1
    juice and finely grated rind of an orange
  • 1
    grated rind of a lemon
  • oil for deep-frying
 

Method

 
In a deep saucepan heat enough oil for deep-fat frying. Sift the self-raising flour, sugar and salt together. Beat the eggs, buttermilk, orange juice and rind together and add to the dry ingredients. Beat well with a wooden spoon until smooth. Drop spoonfuls of the batter in the hot oil and fry until golden brown and cooked. Drain on paper towelling and sprinkle with cinnamon sugar or serve with butter and jam. Makes 20 vetkoek.
