Ingredients (10)

6.00 pork — chops
salt and freshly ground black pepper
oil
180.00 ml orange juice
30.00 ml brown sugar
12.00 ml ginger — ground
5.00 ml salt
Tabasco sauce — a few drops
4.00 patty pans
2.00 orange — segments

Method:

Score the fatty side of the meat. Season lightly with salt and black pepper and brown on both sides in heated oil. Pour off the fat. Blend the orange juice, brown sugar, ginger, salt and Tabasco sauce and pour the mixture over the chops. Slice the squashes into rings about 5 mm thick. Place the squashes in the pan, cover and cook slowly over low heat until the meat is tender and done, and the squashes are cooked. Baste the squashes and meat with the sauce every now and then. Add the orange segments about 5 minutes before serving. Heat until the orange segments are warmed through. Serve with pasta. Serves 6.
