Ingredients (12)

200.00 g dark chocolate — chopped
175.00 g butter
3.00 eggs — extra-large, seperated
1.00 orange — zest only
65.00 ml castor sugar
5.00 ml vanilla — extract
65.00 ml cake flour
2.00 ml Baking powder
CHOC-FUDGE SAUCE
65.00 ml brown sugar
50.00 g butter
65.00 ml cream
100.00 g dark chocolate

Method:

Preheat the oven to 130 &degC. Melt the chocolate and butter over a low heat and set aside to cool slightly.
Beat the egg yolks, vanilla, orange rind and sugar until pale and fluffy.
Beat the egg whites until they form soft peaks.
Fold the chocolate and butter into the egg yolk and sugar mixture.
Then gently fold in the flour and baking powder, and lastly the egg whites.
Pour into a 20 cm lined and greased baking tin and bake for one hour.
Cool and remove from the tin. Serve with fudge sauce.
CHOC-FUDGE SAUCE:
Melt the butter and sugar over a low heat, add the cream and boil for 10 minutes, then add the chocolate and stir until melted.
