Ingredients (10)

8.00 chicken — thighs or drumsticks
sea salt and freshly ground black pepper
oil
1.00 onion — finely chopped
2.00 celery stalks — sliced
2.00 garlic — cloves, crushed
250.00 ml stock — chicken
2.00 orange — zest and juice
2.00 orange — sliced
5.00 ml cornflour

Method:

Season the chicken pieces with salt and pepper to taste and brown in heated oil in a pan.
Remove from the pan and sauté the onion, celery and garlic in the pan fat until tender. Add the chicken stock and orange juice and rind.
Return the chicken pieces to the pan. Simmer until the chicken is done and tender. Add the orange slices, heat until warmed through and thicken the sauce with cornflour.
Serve with mashed potato and vegetables.
Serves 4.
