Orange carrot soup

    butter

    onion, coarsely chopped
  • 400
    g
    baby carrots, chopped
  • 750
    ml
    vegetable or chicken stock
  • salt
  • black pepper
  • 10
    ml
    castor sugar
  • 350
    ml
    orange juice
  • 125
    ml
    pouring cream
  • parsley, finely chopped
 

Method

 
Heat the butter in a saucepan. Add the onion and carrot and sauté until soft. Add the stock, sugar, and salt and pepper to taste. Bring to the boil, reduce the heat and simmer for 1 hour. Process in a food processor. Add the orange juice and cream. Serve with parsley. Makes 1,5 litres soup.
