Ingredients (13)

EGG CUSTARD MIXTURE
4.00 eggs
50.00 ml sugar
625.00 ml milk
5.00 ml vanilla — essence
FILLING
250.00 ml orange juice
100.00 g sugar
45.00 ml cornflour
2.00 ml salt
250.00 ml water
5.00 ml orange — peel, julienned
15.00 ml butter

10.00 bread — white, slices

Method:

Preheat the oven to 180 ºC (350 ºF). Remove the crusts and cut the bread into quarters. Place in a dish. Beat the eggs and sugar, then add the milk and the vanilla essence. Pour over the bread. Use a little of the orange juice to make a paste of the sugar, cornflour and salt. Bring the remaining of the orange juice and the water to the boil and add the cornflour paste. Stir continually while bringing it to boiling point. Add the orange peel and butter. Line a greased ovenproof dish with the bread slices. Pour the filling over it and pour the rest of the egg custard mixture over this. Dot with butter. Place into a dish filled with enough hot water to come halfway up the sides of the dish and bake for approximately one hour or until the pudding is cooked and the corners of the bread begin to brown.
Serves 6-8.
