    orange juice

    ml
    lemon juice
  • 2
    ml
    grated orange rind
  • 1
    ml
    salt
  • 10
    ml
    honey
  • 250
    ml
    sunflower oil
  • 20
    ml
    wholegrain mustard
  • 5
    ml
    brandy
  • 1
    extra-large egg
 

Method

 
Whisk together the egg, egg yolk, orange juice, lemon juice, orange rind, salt and honey. Slowly add the sunflower oil drop by drop while beating continuously. Beat until the mixture thickens. Stir in the mustard and brandy and chill until needed.
