Orange and date muffins

    cake flour

    bicarbonate of soda

    baking powder
  • 2
    ml
    salt

    white sugar
  • 125
    ml
    chopped walnuts
 

Method

20 to 25 minutes
 
Preheat the oven to 180 °C. Grease 8 to 10 muffin tin hollows with non-stick spray or butter or line with paper cups.
Roughly chop the whole orange, removing the pips but not the rind.
Place the orange pieces and orange juice in a food processor and pulse until the orange is finely chopped.
Add the dates, egg and butter and pulse until blended.
Sift the flour and bicarbonate of soda into the bowl of the food processor.
Add the salt and sugar and pulse until just blended. Stir in the walnuts.
Fill the muffin tin hollows or paper cups three quarters of the way with the batter and bake for 20 to 25 minutes or until done and a testing skewer inserted in the centre comes out clean.
