Orange River mud pie with wild berries

    butter

    whisky or brandy

    sugar
  • 250
    g
    dark chocolate, finely chopped
  • 375
    ml
    warm water
  • 375
    ml
    self-raising flour
  • 65
    ml
    cocoa
  • 2
    extra-large eggs
  • 5
    ml
    vanilla essence
 

Method

 
Preheat the oven to 180 ºC. Spray a medium-sized ovenproof dish with non-stick spray. Slowly melt the butter in a saucepan. Add the whisky, sugar, chopped chocolate and water, stirring until the chocolate has just melted and the mixture is smooth. Sift the self-raising flour and cocoa together and gently beat into the chocolate mixture. Add the eggs and vanilla essence and beat until just blended. Turn the batter into the-prepared dish and bake for 40-45 minutes or until a testing skewer comes out clean. Serve lukewarm or cold with a variety of berries and cream if desired. Makes a medium-sized pudding.
