Open lasagne topped with sausage meat

    olive oil
  • 300
    g
    pork sausage meat
  • 250
    g
    fresh brown mushrooms, sliced
  • 250
    g
    baby tomatoes, quartered
  • 1
    chilli, chopped
  • 30
    ml
    parsley
  • salt
  • freshly ground black pepper
  • 12
    lasagne sheets, cooked al dente
  • olive oil for drizzling
  • Parmesan cheese shavings
 

Method

 
Heat oil in a frying pan, add sausage meat and cook for two minutes, breaking meat up with a spoon. Add mushrooms, tomatoes and chilli and cook until golden brown. Add parsley and season. Place lasagne sheets on four plates. Top with sausage mixture, drizzle over extra olive oil if necessary and add Parmesan. Serves 4.
