  • 125
    g
    butter
  • 15
    ml
    sugar
  • 100
    ml
    cake flour
  • Filling
  • 6
    large onions
  • 30
    ml
    butter
  • 2
    eggs
  • 250
    ml
    milk
  • 15
    ml
    sugar
  • salt and milled black pepper to taste
 

Method

 
PASTRY:
Cream butter and sugar and mix in flour.
Pat pastry into a 25 cm diameter loose-based quiche pan. (Pastry is very soft and has to be scooped up and patted in with floured fingers.)
Refrigerate for at least 1 hour before baking.

FILLING:
Sauté onions in butter until limp.
Add eggs 1 at a time, mixing in well. Allow to cool slightly.
Pour in milk and season with sugar, salt and pepper.
Spoon into pastry case and bake at 190 ºC for 30 to 35 minutes, or until golden.
