Slice onions into
rings and boil water for 15 mins, they should still be slightly firm.
the water, leaving just enough to cover the base.
Add the sugar, salt, cinnamon
and bay leaves and boil for 30 mins or until sugar is dissolved and starts to
form a syrup.
Turn down the heat and add the vinegar, simmer until sticky, add
sugar according to taste.
Cook until it becomes brown and watch it closely or
it will burn. Let it cool and bottle.
Refrigerate after opened.
Has a shelf life of 6 months.
