Onion marmalade

    ml
    olive oil
  • 15
    ml
    brown mustard seeds
  • 3
    large onions
  • 2
    chillies
  • 10
    ml
    cayenne pepper
  • 60
    ml
    brown sugar
  • water
  • 250
    ml
    red wine
  • 30
    ml
    red wine vinegar
  • 45
    ml
    balsamic vinegar
  • 1
    bay leaf
 

Method

 
Heat olive oil in a pot and add mustard seeds.
When the seeds begin to pop, add onion and chilli and sauté for 5 minutes.
Add cayenne, sugar and water and cook for 15 minutes.
Add red wine, both vinegars and the bay leaf and cook over a low heat for 15 to 30 minutes until the onions have caramelised and the sauce is thick and brown.
Store in a jar in the fridge and eat hot or cold. Add more chilli if you like it hotter.

Makes about 1 litre
