Ingredients (8)

4.00 kg onion — sliced
1.00 vinegar — grape
45.00 ml golden syrup
900.00 g sugar
25.00 ml curry powder
25.00 ml mustard — powder
7.00 ml salt
50.00 g cornflour

Method:

Place the sliced onions in a saucepan and cover with hot water. Boil until just soft. (Do not allow the onions to become mushy.) Drain well.
Blend the remaining ingredients, except the cornflour, in a saucepan and heat. Stir until all the sugar has dissolved.
Blend the cornflour with just enough cold water to form a smooth paste. Remove the curry mixture from the heat and stir in the cornflour paste. Return to the heat and boil until the mixture thickens and is cooked through.
Add the onions to the curry mixture and bring to the boil.
Spoon the atjar into sterilised jars while still hot.
Makes about 5 litres.
