One-pot spicy chicken and beans

    olive oil
  • 1
    onion - chopped
  • 3
    sticks celery - chopped
  • 2
    cloves garlic - chopped
  • 1
    red chilli - seeded and chopped
  • 500

    chicken mince
  • 5
    ml
    chilli powder
  • 5
    ml
    ground cumin
  • 15
    ml
    flour
  • 125
    ml
    chicken stock
  • 1
    can
    cannellini beans - drained
  • 1
    can
    chopped tomatoes
  • 50
    ml
    coriander - chopped
  • wrap or pita bread
 

Method

Heat oil in a saucepan. Fry onions, celery, garlic and chilli until soft.

Break up lumps in the mince, add and fry.Add in spices and flour and fry for 2 - 3 minutes.

Add the tomatoes and stock, cover and simmer for 15 - 20 minutes.

Stir in the beans, heat through and serve garnished with chopped coriander.

Eat your one-pot spicy chicken and beans in a wrap or with pita bread.
