Ingredients (13)

1 onion — chopped
3 celery stalks — chopped
2 garlic — cloves, chopped
1 red chilli — deseeded and finely chopped
500 g chicken mince
5 ml chillies — powder
5 ml cumin — ground
15 ml flour
125 ml stock — chicken
1 cannellini beans — tinned, drained and rinsed
1 tomatoes — chopped
50 ml fresh coriander — chopped

Method:

Heat oil in a saucepan. Fry onions, celery, garlic and chilli until soft.

Break up lumps in the mince, add and fry.Add in spices and flour and fry for 2 – 3 minutes.

Add the tomatoes and stock, cover and simmer for 15 – 20 minutes.

Stir in the beans, heat through and serve garnished with chopped coriander.

Eat your one-pot spicy chicken and beans in a wrap or with pita bread.
